Whether you’ve picked apples at a farm or grabbed some from Dewick, and whether you’re looking for a seasonal recipe or just craving something sweet and fresh, this simple recipe will be a satisfying snack. With just two apples and a few basic ingredients, you and your pals could be on your way to enjoying this moist cake that captures the essence of autumn.

Spiced Apple Cake

Ingredients

  • 1/4 Cup Oil (I used safflower)
  • 1/4 Cup Plain Greek yogurt
  • 1/2 Cup Packed brown sugar
  • 2 Eggs
  • 1 Cup Flour
  • 1/4 Cup Oats
  • 1/2 tbsp Baking powder
  • 1 tbsp Baking soda
  • 1/4 tbsp Cinnamon
  • 1 tsp Nutmeg
  • 2 apples or 1 Cup thinly sliced apples (Use your favorite kind; gala works great)
  • Topping ideas: white chocolate chips, pumpkins seeds, crushed or slivered almonds, caramel chips

Directions

  1. Preheat oven to 350˚ F. Grease one 9-inch cake pan or loaf pan.
  2. Peel apples, then continue using the peeler to slice the apple into short slivers. Set aside for now.
  3. Stir together the dry ingredients: flour, baking powder, baking soda, oats, Cinnamon powder, nutmeg.
  4. Mix together the wet ingredients: Oil, yogurt, eggs. Add the brown sugar and stir the wet ingredients until well mixed.
  5. Add the wet ingredients to dry ingredients and mix until just combined.
  6. Fold in the sliced apple and pour into the cake pan. Sprinkle the batter with the topping(s) of your choice.
  7. Bake for 30-35 minutes. Let cool on a wire rack, and enjoy warm with a cup of coffee or tea.
