Whether you’ve picked apples at a farm or grabbed some from Dewick, and whether you’re looking for a seasonal recipe or just craving something sweet and fresh, this simple recipe will be a satisfying snack. With just two apples and a few basic ingredients, you and your pals could be on your way to enjoying this moist cake that captures the essence of autumn.
Spiced Apple Cake

Ingredients
- 1/4 Cup Oil (I used safflower)
- 1/4 Cup Plain Greek yogurt
- 1/2 Cup Packed brown sugar
- 2 Eggs
- 1 Cup Flour
- 1/4 Cup Oats
- 1/2 tbsp Baking powder
- 1 tbsp Baking soda
- 1/4 tbsp Cinnamon
- 1 tsp Nutmeg
- 2 apples or 1 Cup thinly sliced apples (Use your favorite kind; gala works great)
- Topping ideas: white chocolate chips, pumpkins seeds, crushed or slivered almonds, caramel chips
Directions
- Preheat oven to 350˚ F. Grease one 9-inch cake pan or loaf pan.
- Peel apples, then continue using the peeler to slice the apple into short slivers. Set aside for now.
- Stir together the dry ingredients: flour, baking powder, baking soda, oats, Cinnamon powder, nutmeg.
- Mix together the wet ingredients: Oil, yogurt, eggs. Add the brown sugar and stir the wet ingredients until well mixed.
- Add the wet ingredients to dry ingredients and mix until just combined.
- Fold in the sliced apple and pour into the cake pan. Sprinkle the batter with the topping(s) of your choice.
- Bake for 30-35 minutes. Let cool on a wire rack, and enjoy warm with a cup of coffee or tea.
